So far, naka 3 attempts na ako sa paggawa ng homemade roasted chicken this year and ang dami kong natututunan every time. I think yun ang very fulfilling sa cooking, it's really about the journey. Nakanang!
Ang plano ko talaga, saka ko na ipopost once na-perfect ko na ang recipe, pero naisip ko, mas better kung ishare ko sa'yo ang aking "journey" to that perfect roast.
Hindi pala madali gumawa nito sa totoo lang, kaya nacha-challenge talaga ako. Oo, madali namang bumili na lang ng ready made diba? Pero para sa'kin, iba pa rin yung gawa sa bahay kung saan alam mo saan galing ang bawat ingredient. Also, iba rin yung nakapagtrial and error ka talaga. At syempre, mas special nga naman kapag ikaw mismo ang nag-effort gumawa.
Ang dami kong pinanood na videos sa YouTube at may mga ginaya din akong ilang tips, pero ayon sa'king pagtesting, mabibilang mo lang talaga yung mga matitinong recipe online. Pati yung mga videos ng ilang sikat na sikat na chefs, jusko hindi naman masarap! Maganda lang tingnan, pero kapos na kapos sa lasa. tsk tsk tsk
So far, ito ang mga resulta ng attempts ko:
1st Attempt: HINDI MASARAP!
Lessons Learned:
- Takpan ng foil para hindi masunog agad
- Huwag gumamit ng red onions dahil too matapang ang flavor
- Huwag gumamit ng basil dahil too overpowering (nakita ko kasi ito sa video ni Jamie Oliver - Hindi naman masarap!)
- Huwag manggigil sa lemon. Naging too acidic tuloy
- Huwag sunugin ang drippings dahil papait ang gravy
2nd Attempt: SUPER SARAP, Kaso fail pa rin yung gravy
Lessons Learned:
- para mas juicy at hindi masunog ang drippings, lagyan ng water sa ilalim ng rack para magkaroon ng steam affect. Think sauna
chicken.
- masarap at ang bango pala kapag may roasted green olives
- hindi ko bet ang lasa ng white wine (sauvignon blanc)
as liquid ng gravy. Feel ko basic lang na ma-butter and herb. Ayoko ng complicated.
3rd Attempt: Super Sarap na nung Chicken at Gravy, pero hindi ko natancha ang cooking time =(
By now, masasabi kong natumbok ko na yung lasang trip ko. Proud na din ako sa gravy ko. - Asawable na!
Kaso lang, mejo na-overcook ko this time. Well at least, cooking time na lang talaga ang aaralin ko next.
In the meantime, here's my very own masarap
na formula:
Chicken Marinade:
- full cream milk
- juice of 1 lemon
- thyme
-rosemary
- granulated garlic
- salt
-pepper
Place chicken and marinade ingredients sa isang ziplock . Iwan overnight sa ref.
Roasting Day!
- Be sure na may rack ang iyong roasting pan, para naka-angat ang chicken while bumababa ang juices ng manok for your drippings later.
On your rack, lagyan ng mga sumusunod: (ito na rin actually ang ingredients para sa gravy mo)
- 4-5 whole garlic
- white onions
cut in half (this will naturally add sweetness sa gravy mo later kapag nagcaramelize na sya)
- orange sweet potatoes
(naturally adds sweetness din and starch para sa gravy mo later. A good alternative sa carbs, kung naka no-rice ka like me.)
- pitted green olives
(naturally adds saltiness and aroma)
drizzle with:
- olive oil
- salt n pepper
- garlic powder
- rosemary
Ipatong ang marinated chicken sa veggies.
Rub chicken with the ff:
- salt n pepper
- garlic powder
- rosemary
- paprika
Insert large cubes of butter
under the skin, then squeeze 1 lemon
for a little acidity
You may also add more cubes of butter on top para mas malasa ang drippings later.
Preheat oven to 380 degrees Fahrenheit
Place aluminium foil
para hindi masunog agad ang top.
Don't forget na lagyan ng water yung ilalim ng pan
, para hindi masunog ang drippings and for that sauna effect
for added juiciness.
Roast for 1hr.
Every 15 mins, visit mo yung chicken para i-baste using the drippings
to prevent chicken meat from becoming dry.
Remember, mas sumasarap ang pagkain kapag binigyan mo ng time at patience.
After 1 hour, tanggalin ang foil
. I-baste muli ang chicken. By this time, sobrang bango na ng bahay mo for sure.
Ibalik muli sa oven and roast for another 20-30mins until golden brown na ang ibabaw. Continue basting from time to time if necessary.
By this time, nagmerge na yung mga flavors and aromas...
But wait lang muna, hindi pa tapos. Let the chicken rest. Time to make the gravy
Season veggies with salt and pepper
. Baste
with existing drippings.
Roast the veggies some more for about 20-30mins at 380 deg F
or until golden brown na.
When veggies are perfectly roasted, set them aside. Get a strainer and ibuhos ang drippings para mas-smooth ang gravy. You may also add a spoonful of cornstarch if you prefer a thicker consistency ng gravy.
On a serving plate, arrange your chicken and veggies. You can either pour the gravy on top, or set aside in a bowl, para kanya kanyang kuha. Before serving, squeeze half a lemon for a little zing!

- baste the chicken often para talagang juicy
